The pizza stone distributes heat evenly across the pizza base to maintain a constant baking temperature. The pizza stone’s porous surface absorbs moisture from the pizza dough, resulting in a deliciously crisp pizza crust.Note: The pizza stone can be used in traditional household ovens. Care instructions from the box:The pizza stone is intended for oven use only. Do not place in a microwave.Do not place cold pizza stone in a hot oven. [My note: You can place the cold stone in a cold oven and let the stone heat up as the oven heats up.]Do not place hot pizza stone on a cold surface or counter top. Sudden or uneven heating or cooling (thermal shock) can cause the stone to breakTransfer your pizza onto a cutting board before cutting to keep ingredients from staining the pizza stone, and to prevent marking the pizza stone with the knife edge.Do not use oils or sprays on the pizza stone. Brush or scrape clean and wipe off any excess crumbs with a dry cloth. If you need to wash your pizza stone, let it cool and washwith hot water.Do not use soap as it will absorb into the pizza stone’s porous surface.Do not place in dishwasher.Note: It is normal for the pizza stone to stain and darken with use as it absorbs oils from the pizza dough. This is normal and will not affect its performance.When using the pizza stone in your Brevillte Smart Oven*, refer to the Instruction Booklet for further instructions. Usage instructions:Pre-heat the pizza stone in your oven for 15 minutes at 450°F (230°C).Note: Inserting a cold pizza stone into a hot oven can cause the stone to break.Once the pizza stone has been pre-heated, slightly dust the pizza stone with cornmeal or semolina flour to prevent the pizza from sticking, and carefully slide your pizza onto the hot pizza stone using a pizza peel or large spatula.Alternatively you can prepare your pizza on the back of a standard non-stick pizza pan, dusted with cornmeal so it can slide off easily. Warning: The pizza stone can become extremely hot. Use oven mitts and extreme care when placing the pizza onto the pizza stone and when removing it. Allow the pizza stone to cool down before removing it from the oven.
